These yummy energy balls are a famous Sentinel snack. They’re great for a mid-day boost or as a decadent desert. Either way, we know you’ll find them irresistibly delicious!
No Bake Vegan Energy Balls
2 cups rolled oats
1/2 cup pitted medjool dates (~15)* Chopped
½ cup Raisins
1 cup all-natural Peanut Butter
½ cup Maple Syrup or Honey
2 teaspoons vanilla extract
⅛ teaspoon coarse sea salt
½ cup Dark Chocolate Chips
Place the oats into a bowl, then add everything else.
Mix with clean hands until all ingredients come together. Roll ingredients into inch-and-a-half diameter balls.
Leave in fridge for a couple hours to allow balls to set into their ball form.
If you want to be fancy you can melt chocolate in a bowl in a steam bath and dip the balls half into the chocolate. Allow time for the chocolate to harden before serving.
Keep in the fridge until eaten!
